Some Mushrooms Are Worth Getting Excited About

When a fresh delivery from Driftwood Farms arrives at Mash & Vine Market, these aren’t ordinary grocery-store mushrooms.

Driftwood Farms is an Arkansas family farm based near Clinton, where specialty mushrooms and microgreens are grown for restaurants, markets and customers throughout central Arkansas.

The beautiful clusters you see at Mash & Vine can include lion’s mane, oyster mushrooms and other gourmet varieties, with the selection changing according to what is ready to harvest.

From an Arkansas Farm to the Table

Driftwood Farms is the story of a family business that found its place by growing something central Arkansas chefs and food lovers were looking for: exceptional fresh mushrooms grown close to home.

Family Grown

Kristen and Brian Gardner built Driftwood Farms as a family operation, growing first through microgreens and later expanding into gourmet mushroom cultivation.

Veteran Owned

The farm participates in Arkansas’ Homegrown By Heroes program, which recognizes agricultural products produced by military veterans.

Arkansas Grown

Driftwood Farms is a verified member of Arkansas Grown, the Arkansas Department of Agriculture program connecting consumers with foods produced here in the Natural State.

How Driftwood Farms Found Its Niche

Kristen and Brian’s path into farming wasn’t a traditional one. The couple began growing microgreens after researching ways to put more nutrient-rich fresh foods on the table for their family.

Those greens found an audience with local chefs, and the relationships they built throughout central Arkansas eventually led the Gardners toward another opportunity: gourmet mushrooms.

After months of learning the specialized process of mushroom cultivation, the family built its first dedicated mushroom-growing facility. Driftwood Farms harvested its first crop in March 2024.

THE NAME

Why “Driftwood”?

The name comes from the farm’s proximity to Greers Ferry and the unique pieces of driftwood the family found and collected around their property.

It’s a fitting name for a business built around the land, family and finding opportunity in unexpected places.

What You Might Find at Mash & Vine

Mushrooms are an agricultural product, not a factory product. What is available can change with each harvest — and that’s part of what makes finding a fresh batch so much fun.

Lion’s Mane

Impossible to mistake, lion’s mane forms beautiful white clusters with a dense, substantial texture. Slice or tear it into pieces and give it a good sear in a hot skillet.

Oyster Mushrooms

Delicate, savory and incredibly versatile. Oyster mushrooms are excellent sautéed, roasted or added to pasta, rice dishes, tacos, eggs and stir-fries.

And More

Driftwood Farms grows additional gourmet mushroom varieties as well as microgreens. Available varieties can change throughout the growing cycle, so there’s often something new to discover.

FROM THE MARKET TO THE KITCHEN

From Southern-Fried to Steakhouse-Worthy

One of the best things about specialty mushrooms is how many directions they can go in the kitchen. Oyster mushrooms can lean straight into our Arkansas and Deep South love of crisp, golden fried food, while lion’s mane can become the centerpiece of a more refined, steakhouse-style plate.

SOUTHERN-STYLE INSPIRATION

Fried Oyster Mushrooms

This is Arkansas, and we know our fried chicken. Oyster mushrooms are made for that same kind of Southern treatment: seasoned, coated and fried until crisp and golden. This video is a great starting point for turning a fresh oyster mushroom cluster into something crunchy, savory and unmistakably comforting.

GOURMET INSPIRATION

Lion’s Mane Steaks

Lion’s mane shows the gourmet side of specialty mushrooms. Its substantial texture makes it well suited to thick slices, a hard sear and a steakhouse-inspired presentation. This video offers a different kind of inspiration: turning a beautiful lion’s mane into the centerpiece of the plate.

However you cook them, bring the menu idea with you. We’d be happy to help you find a wine, beer or spirit at Mash & Vine Market to pair with dinner.
